ViolaVine tomato and char grilled halloumi burger with basil mayonnaise
The generous thickness of this Viola tomato definitely takes centre stage in this burger. Its vibrant flavour bursts with every bite, providing a refreshing contrast that perfectly complements and balances the saltiness of the Halloumi. This harmonious combination ensures that each mouthful is both rich and satisfying, making the tomato the star in the overall taste.

Ingredients for 2:
160 g Viola Vine Tomatoes
2 Burger Buns
200 g Halloumi
2 Brioche Buns
Handful of Rocket
2 Gherkins thinly sliced
g Cooked Chips
Salad Garnish
Olive oil
Salt and Pepper
4 Tbsp. Mayonnaise with finely shredded basil
Method:
Get the chips cooked as this recipe, once started, will not take that long to finish.
Cut the Halloumi horizontally. Keep to one side until required.
Char-grill the buns on the hot char grill pan turning half-way through to achieve an even criss-cross pattern and place the bottom half on the plate once ready.
Slice the Viola tomatoes quite thickly.
Lightly oil the Halloumi with Olive oil and place it on the same hot chargrill pan and cook for a minute or two until you can start to see it caramelise on the sides. Turn slightly to achieve a criss-crosspattern. Turn-over and repeat that process.
Once everything is cooked and ready to go, place the sliced gherkins on the toasted bun, followed by the Viola tomatoes. Then place the hot halloumi on top of the Viola tomatoes followed by the basil mayonnaise then finish with some fresh rocket, garnish with the chips and the salad garnish.
