Soloh tomato granité
This is one of my favourite ways to enjoy these delicious Soloh Tomatoes. The recipe is elegantly simple, allowing the vibrant flavours of the tomatoes to truly shine. Despite its simplicity, it delivers an unexpectedly deep and satisfying taste experience. It works beautifully as a palate cleanser, refreshing the senses between courses, or can be enjoyed on its own as a light, stand-alone dish.

Ingredients:
500 g Soloh
100 g Water
50 g Icing Sugar
Basil Sprigs
Method:
Mix the icing sugar with the water.
Place the Soloh in a measuring jug and blend until perfectly smooth with a hand blender. Add the sugar syrup and blend again until incorporated.
Pass the mixture through a fine sieve into a shallow dish and place in the freezer.
When required simply scrape the mixture with a fork to break it up and serve in frozen glasses.
Garnish with a sprig of basil and serve immediately.
